Buttermilk Blueberry Breakfast Cake

This breakfast cake is easy to make and a delicious treat in the morning. And it is a great way to use up a lot of blueberries at one time!  I somehow either have too many blueberries or not enough, so you may need to plan ahead and be sure you have enough for this recipe.  You could use less, but the 2 cups of blueberries ensure that you will bite into that tasty fruit with every bite.

Buttermilk Blueberry Breakfast Cake

1/2 c  unsalted butter (1 stick)
zest of one lemon
1 egg
1 c. sugar
2 t. vanilla
1 3/4 c. flour
2 t. baking powder
1 t. salt
1/4 c. buttermilk
2 c. blueberries
1/4 c. flour (additional)

Preheat oven to 350.  Cream the butter with the lemon zest and sugar using a mixer.  Beat until light and fluffy.

Add the egg and vanilla and mix until well combined. Toss the blueberries with the 1/4 c. flour and set aside.  Whisk together the flour, baking powder and salt.

Add half the flour mixture to the wet ingredients and stir with spatula or wooden spoon until incorporated.  Add the buttermilk and mix well. Add the remaining  flour mixture and stir until the flour is absorbed. batter will be thick.  Fold in the blueberries, leaving any excess flour in the bowl.

Grease an 8 inch square pan well.  Spread the batter into the pan. Sprinkle the batter with 1-2 T. coarse sparkling sugar, if desired.  Bake for 40-45 minutes or until a toothpick inserted in the center comes clean.  Let cool at least 15 minutes before serving.

Blueberry Banana Bread

Getting as much baking in as I can before the summer months when it just isn't as much fun to bake the things that take time in an oven.  Soon there will be more grilling recipes and ice cream. YUM!  I am ready. 

But for now, going to bake when I can because there is nothing that tastes better or smells better than any kind of bread baking in the oven. It is totally intoxicating and I wish they could bottle the smell!



BLUEBERRY BANANA BREAD

1/2 c. butter
1 c. cane sugar (I use unrefined)
2 large eggs
1 c. ripe mashed bananas (2-3 large)
1 t. vanilla
2 c. flour
1 t. baking spice
1 t. baking soda
1/2 t. baking powder
1/2 c. blueberries

Preheat oven to 350.  Grease and flour a 9x5" loaf pan.  Set aside.

Combine the flour, baking powder and baking soda in a small bowl and whisk till well mixed. Set aside.

Cream together the butter and sugar until well blended and light.  Beat in one egg at a time and beat until smooth each time.  Add the vanilla and slowly beat in the mashed bananas..  Mix well.

Add in the flour mixture and fold gently with a rubber spatula until well combined and no streaks of flour show in the batter.  Then fold in the blueberries just until evenly distributed in the batter (as much as possible).

Pour the batter into the loaf pan and bake in the oven 50-60 minutes, checking at 50 minutes with a cake tester or toothpick to see if it is done.  I used a Breville air fryer convection oven and set it on Bake and it took the full 60 minutes.  Sometimes a convection oven will take much less time  - it just depends on the batter, or so I am discovering!


So full of blueberries and so yummy.

Cool in the pan for 10 minutes and then invert right side up onto a wire rack to cool completely.

This bread was moist and delicious and super easy to make!

Lemon Blueberry Overnight Breakfast Cake

I was a little hesitant to try this recipe because I was not at all sure this would bake up well - but it was a nice surprise.  I love that I could get it all ready the night before and simply place it in the oven in the morning and have a delicious breakfast treat.  I liked it best served warm out of the oven and it reheats beautifully.  I hope you try it and enjoy it as much as I did.




LEMON BLUEBERRY OVERNIGHT BREAKFAST CAKE

2 1/2 c. flour or white/whole wheat flour
1 1/2 t. baking powder
1/2 t. baking soda
3/4 c. organic cane sugar
1/4 t. salt
2 eggs, room temp and well beaten
1 c. buttermilk
1/2 c. lemon juice, freshly squeezed
zest of 1 lemon
1/2 c. melted butter
1 t. vanilla bean paste or vanilla extract
1/2 t. Fiori Di Sicilia (optional - from King Arthur flour - adds an added citrus flavor layer)
2 c. blueberries

Grease a 9x13" baking pan and set aside.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda,sugar and salt.
Add in the beaten eggs, buttermilk, lemon juice, lemon zest, butter,vanilla paste or extract and the citrus extract (optional).  Beat with a mixer until blended.
Gently fold in the blueberries with a rubber spatula.
.
Spoon the dough into the prepared baking pan. Cover with plastic wrap and refrigerate overnight.
In the morning, remove the pan and place on the counter while the oven is warming. 
Preheat the oven to 350 °F.  Bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean. 
Remove and serve while warm!  (it is good cold, but it is exceptionally good warm!)

No Churn Blueberry Crumble Ice Cream

It has been unseasonably warm here in Oceanside, even on the coast.  But I am happy to say that after a 2 1/2 year fight with the HOA here, I finally have air conditioning!  I will just say that the last week has been much more bearable with cool air blowing through the condo.  I am so very grateful...phew!  It was worth the struggle to finally be able to live comfortably when the temperature rises here.

Another thing that makes life more bearable when the sun is blazing is ice cream.  Yes - a year round treat for sure - and although it can be an indulgent sweet, it becomes a bit of a necessity in the summer.  Right?  And this no churn method that I turn to often, keeps the electricity off and produces the most delicious, creamy spoon licking dessert in no time at all!




NO CHURN BLUEBERRY CRUMBLE ICE CREAM

Ice Cream Base:

2 c. heavy cream
1 - 14 oz can sweetened condensed milk (full fat)
1 1/2 t. vanilla bean paste


Blueberry Sauce:

1/2 t. cornstarch (I use arrowroot starch)
2 t. water
1 1/2 c. fresh blueberries (if using frozen, do not thaw)
1 T. organic cane sugar


Crumble "Topping":

1/4 c. flour
2 T. packed brown sugar (light or dark)
1/4 t. cinnamon
2 T. unsalted butter, melted

To Make the Blueberry Sauce:

Mix the arrowroot starch (or cornstarch), and water together in a very small bowl. I like to use a custard cup.  Set aside.
Combine blueberries and sugar together and heat in a small saucepan over medium low heat.
Stir constantly and break up the blueberries as they heat up and start to burst.  When the blueberries have released some liquid (when you gently smash them with the spoon), add the cornstarch/water mixture. Increase the heat to medium and stir well for about 3 minutes.  Remove from the heat and let the blueberries cool completely.  The mixture will thicken as it cools. (Putting it in the refrigerator will help it cool down quicker).
Before or after cooling, the mixture can be placed in a strainer so you just have the blueberry gel.  I left it as is because I like the blueberry pieces!

To Make the Crumble:

Mix the flour, brown sugar and cinnamon together with a fork.  Add the melted butter and mix again until a small clumps form.

To Make the Ice Cream:

In a small bowl, combine the sweetened condensed milk and vanilla bean paste. Set aside.

In a medium-large bowl, beat the heavy cream on medium high speed with a stand or hand mixer until stiff peaks form, about 3-4 minutes.  Add the sweetened condensed mixture and beat on low until just combined, or fold gently together until well mixed.


I know......... YUMMMMM

Spoon about half the ice cream into a freezer container.  (I use the Tevolo tub).  Spoon about 1/4 c. blueberry sauce and half of the crumble mixture and gently swirl into the ice cream with a knife a few times.  Repeat with the remaining ice cream, 1/4 c. sauce and remaining crumble making another layer of swirls (don't insert the knife all the way down - just swirl the top layer).  Freeze until firm. at least 5-6 hours.

Save the remaining blueberry sauce to serve over the ice cream.

This is so good and you can make change it completely by utilizing a different fruit (strawberry swirl ice cream to come!)

Blueberry Lemon Muffins - Grain Free



This is the time of year that I seem to be stuck on all things lemon, blueberry, zucchini etc - and this post will be no different.  I am chuckling to myself as I share this recipe, knowing that I currently have two pints of beautiful blueberries waiting to be baked into a new concoction. And who knows - I may just eat them as is or roast them with some fresh strawberries.  Yep - that's it!  With Memorial Day weekend around the corner, roasting the berries will be the perfect treat to spoon over homemade strawberry "coconut" ice cream.  Yum!  The ice cream is already in the freezer so the hard part is done!  Recipes to follow soon - once I get it all made and take some photos..... :)

But back to the task at hand - these delicious muffins.  And they truly are just that - DELICIOUS!

And let me just add, I love this cookbook, especially because the quantities are given in regular measurements and grams. With the different and sometimes challenging textures of almond and coconut flours, using a gram measurement makes me feel much more confident in my final result.  I will share both measurements, but I strongly suggest you use the gram measurement, especially for the dry ingredients. It is SO easy and much more accurate.  End of lecture! :)

Blueberry Lemon Muffins
adapted from Every Last Crumb by Brittany Angell

180 g.(1 1/2 c.) finely milled almond flour
132 g.(3/4 c.) sweet potato flour (can sub with potato flour, but the sweet potato contains a resistant starch that is better for the body)
1 t. baking powder
1/2 t. sea salt
174 g. (about 1 1/2 c plus 1 1/2 T.) of maple or coconut sugar - I used both for added flavor so 87 g. maple sugar and 87 g. coconut sugar
60 g. (about 1/3 c.) melted coconut oil (melt first and then measure)
4 eggs
grated zest of 1 lemon (2 T.)
1 T. vanilla extract
1 t. fresh lemon juice
1 1/2 c. fresh blueberries

Preheat the oven to 350.  Line a muffin pan with parchment liners.  Set aside.

In a medium bowl, combine the almond flour, sweet potato flour, baking powder and salt and whisk until well blended.  Add the remaining ingredients (except the blueberries)  and stir well to combine.

Gently fold in the blueberries.

Fill the muffin cups about 3/4 full and bake for about 30 minutes or until a toothpick inserted in the center comes clean.




Cool on a wire rack.  They will keep in a sealed container on the counter for 1-2 days, or place in the refrigerator for a few days or the freezer for longer storage.

These were a hit with all of the neighbors!

Zucchini Banana Blueberry Muffins





This is a great time of year when zucchini and blueberries are plentiful and reasonably priced and what a great way to utilize these fresh flavors.  I don't think I would ever have put all three together so I am thrilled that someone else tried it first with success.  These are not only tasty, but they are healthy with no butter (just coconut oil) and very little sugar.  And moist?  They are incredibly moist and flavorful and you honestly forget that they are healthy because all you taste are the bananas and blueberries exploding with flavor with each bite.  These are great for breakfast but also as a midday snack.  And they freeze really well.

You will be SO glad you tried this recipe - I am!

Zucchini Banana Blueberry Muffins

Ingredients:

1 1/2 c. white whole wheat flour
3/4 t. baking powder
3/4 t. baking soda
1/2 t. salt
1 t. ground cinnamon
2 medium ripe bananas, mashed (will yield 1 cup)
1/4 c. organic cane sugar
1/4 c. organic light brown sugar, packed
1 large egg
1/3 c. melted coconut oil, cooled
1 t. vanilla extract (I use Vanilla Bean Extract Crush from King Arthur Flour)\
1 c. shredded zucchini
1 c. fresh blueberries
Turbinado or Demera sugar for topping

Directions:

Preheat oven to 350.  Line muffin pan with paper liners.  Set aside.

In a small bowl, whisk the flour, baking powder, baking soda, salt and cinnamon together.  Set aside. 

In a large bowl, mix the mashed banana, cane sugar, brown sugar, egg, coconut oil, and vanilla.  Stir until well combined.  Add the flour mixture and fold gently until all of the flour is incorporated. Don't over mix. Place the shredded zucchini in a couple of paper towels and squeeze to remove most of the excess moisture.  Fold the zucchini into the batter and then fold in the blueberries.

Spoon the batter into the lined muffin cups, about 3/4 full.  Sprinkle the tops with turbinado or demera sugar (optional).  Bake 20-23 minutes or until a toothpick inserted in the center comes out clean..  Cool muffins on a wire rack.

Definitely good enough to eat - guilt free!

Cinnamon Sugar Blueberry Banana Bread


If you have bananas that are ripening way too fast (especially in the summer) and some fresh blueberries, then this recipe is for you!  Most of the work is done in the blender so it is easy and delicious too.



Cinnamon Sugar Blueberry Banana Bread

adapted from Crazy for Crust

Ingredients:
3/4 c. cane sugar
1/2 c. butter, softened
1/4 t. salt
2 overripe bananas
2 eggs
7 T. buttermilk
1 t. vanilla extract
1 t. baking soda
1/2 t. baking powder
2 c. flour
2 c. fresh blueberries

Topping:
1/4 c. cane sugar
1 t. cinnamon

Directions:
Preheat the oven to 375.  Grease a 9x5" loaf pan and dust with sugar.  Set aside.

Cream the butter and 3/4 c. sugar with a hand mixer. Set aside.

Add the bananas, eggs, buttermilk, vanilla, salt, baking powder and baking soda in a blender jar and process until smooth.

Pour half the banana mixture into the butter mixture, along with 1 c. flour. (Remove 1 T. flour from remaining cup and toss with blueberries).  Mix with hand mixer just until incorporated.  Add the remaining banana mixture and flour.  Mix just until combined.  Gently fold in the floured blueberries (this prevents them from falling to the bottom of the loaf while baking).  Pour mixture into the prepared pan.

Combine the 1/4 c. sugar and cinnamon in a small bowl.  Sprinkle evenly over the top of the batter.

Bake for 45-50 minutes or until a toothpick inserted in the center comes clean.  The edges should be a dark brown with a crack down the middle.

Cool completely before removing from the pan.  This keeps for quite a while. Put it in the refrigerator after a day (if you are lucky enough to have any left!  Enjoy!

Blueberry Streusel Toffee Muffins

Tired of zucchini recipes?  I have more to come, but will give you a little break with this recipe.  I may be my new favorite blueberry muffin. The streusel topping (also in the middle) really makes it!


Blueberry Streusel Muffins

Muffin Ingredients:
1/2 c. butter, softened
1/2 c. sugar
1/4 c. muscovado sugar (light or dark brown is fine)
2 large eggs
1/2 c. Greek yogurt (my preference)
2 tsp. vanilla extract
1 3/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/4 c. milk
1 1/2 c. fresh or frozen (unthawed) blueberries

Streusel Ingredients:
1/2 c. muscovado sugar
1/2 c. toffee bits (Bits o' Brickle)
1 tsp. cinnamon

Preheat oven to 425.  Spray a muffin tin with nonstick spray and set aside.

First make the streusel. Combine the muscovado sugar, toffee bits and cinnamon and set aside.


Toffee mixture

In a medium bowl, beat the butter on high speed until smooth and creamy, using a stand or handheld mixer, for about a minute.  Add the sugars and beat on high until creamed which will take about two full minutes.  Scrape down the sides and bottom of the bowl  as needed.  Add the eggs, yogurt, and vanilla extract.  Beat on medium speed for one minuted, then increase the speed to high and continue until the mixture is combined and uniform in texture. 

In a large bowl, whisk together the flour, baking soda, baking powder and salt.  Pour the wet ingredients into the dry and slowly mix with a whisk.  Add the milk, gently whisking until combined and little lumps remain. 
Layer 1 T. batter in the bottom of each muffin tin.   Top each with a little of the streusel topping.

Now fold in the blueberries with a rubber spatula. Mix as little as possible. Add more batter onto the top of the streusel with a big scoop of batter. Fill to the top. Top with more streusel - be generous.

Place in the oven for 5 minutes; then lower the temperature to 350 and bake for about 15-18 minutes or until a toothpick inserted in the center comes out clean.  The total time for the muffins to cook is 20-23 minutes.

Cool in the pan for 10 minutes, then gently remove from the muffin pan and continue cooling on a wire rack.




SOOOOO good!

Low Sugar Blueberry Muffin Coffee Cake

This post was supposed to go up early last week, but I got distracted with cards!  So the timeline is a little off, but the end result still works!

I was going to bake all week, but my air conditioning died and I didn't want to add any additional heat to the house.  It started malfunctioning a week ago, Memorial Day of course, with water all over the garage floor. My first thought was the water heater, but I had just replaced it less than a year ago.  So it must be a broken pipe somewhere, right?  So the next morning a plumber was here after at least four phone calls to make it happen, only to find out that there was no broken pipe, and I was $90 poorer!!  It was the furnace! Never would I have thought that the furnace would leak water, but it was from the condensation that builds up from the air conditioner . (I know - TMI!) The pan had mysteriously broken and so was not catching the water, hence the mess on the floor!  Ugh.  So it took a couple of days to see if it was still under warranty,find the part, order it , etc etc. The part is supposed to arrive tomorrow and then they will get the air back up and running again, just in time for the weather to cool off for a few days.Just my luck!

So......I decided that I was going to bake anyway, but start really early in the morning.  I had three baskets of blueberries waiting for me, so that narrowed down my options.  I had just run across this recipe a few days ago, so the decision was easy!



It IS as good as it looks!


Low Sugar Blueberry Muffin Coffee Cake
adapted from The Baker Chick


Cake Ingredients:
2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda*
1/2 tsp. salt
1/2 c. butter, softened
1/2 cup Truvia Baking Blend (if using regular sugar,increase to 1 cup)
2 eggs
2 tsp. Vanilla Bean Crush (King Arthur Flour)
1/2 c. lemon Greek yogurt (plain or vanilla is also fine)
2 cups blueberries, fresh or frozen
*Omit the baking soda if using regular sugar.The soda helps increase the volume if using the Truvia Baking Blend.

Topping Ingredients:
2 Tbsp. muscovado (molasses) sugar
2 Tbsp. butter, melted
1 Tbsp. flour
4 Tbsp. rolled oats
1/4 tsp. cinnamon

Mix the topping ingredients together until crumbly and set aside.
Preheat the oven to 350. Lightly grease or spray an 8x8 square pan.
In a small bowl, combine the flour, baking powder, baking soda and salt.
Whisk lightly.

In a large mixing bowl, beat the softened butter and Truvia Baking Blend until light. Beat in the eggs, one at a time, and then add the vanilla extract and yogurt and mix until smooth. Add the flour and stir by hand, just until combined. Fold in the blueberries gently.

Spread the batter evenly in the pan - it will be thick.

This is ready to go in the oven with the topping scattered over.


Pour batter into the prepared pan and sprinkle with the topping.
Bake at 350 for 40 minutes or until golden brown and a toothpick inserted in the center comes clean.
This really is a muffin in a pan - 
the taste is wonderful with all of those plump blueberries!

Cool and enjoy!


UPDATE ON THE A/C:  The part DID arrive and it was up and running last Monday...... but now, six days later and there is water all over the garage floor again this afternoon, and a new leak up above.  I am feeling pretty jinxed right now.  Luckily the company is so wonderful that the guy who helped me is leaving a job TWO HOURS AWAY and driving back tonight to help me.  Talk about restoring my faith in humanity and the kindness of others.  So am hopeful it won't be another week of problems, but they just have to figure out why this keeps happening!

Amazingly EASY Peach Cobbler

I love it when I find something that is so incredibly easy AND good.  I really like to try to bake as much as I can from scratch. But there are times when there just isn't the time or the energy to take those extra steps.  So when I ran across this recipe I was more than willing to give it a try, and it was unbelievably easy and surprisingly good.

I will admit to having my fair share of cake mixes stored away in the pantry that I have picked up on sale. There is always a need for something quick and easy, and I have all of the Cake Mix Doctor cookbooks that put this supply to good use.  It is always comforting to have a back up plan , right?

So this recipe was not only easy, but delicious, and I imagine you could easily substitute apples or any combination of berries.

SUPER EASY PEACH COBBLER


There is actually very little that I changed with this recipe because when there are only FOUR ingredients, there isn't much leeway!

1 box cake mix (I used Butter Golden)
1 (12-oz can) diet Seven-Up
4-5  cups fresh peaches, chunked
1 cup fresh blueberries
2 TBSP cinnamon-sugar

Peel and slice fresh peaches into chunks. Place into a 13x9 inch pan that has been sprayed with non-stick spray. Scatter the blueberries over the top of the peaches.



Step 1 - add the fruit!


Sprinkle the dry cake mix directly on top of peaches. Use a spoon or rubber spatula to gently press the cake mix down into the fruit.

Pour the can of soda on top of the cake mix,, making sure to cover the cake mix completely. It will bubble up and look rather inedible!



The Seven-Up is foaming!

Preheat the oven to 350 degrees. Do not preheat earlier because you want to give the cobbler time to sit and bubble and just be!

Sprinkle the cinnamon-sugar on top of the soda. It will pop some of the bubbles, but it will still be very runny on top.



Adorned with cinnamon-sugar.


Bake cobber for 1 hour. Remove from oven and let cool for about 5 minutes. Serve with vanilla ice cream or whipped topping! 





The smell of this right out of the oven is heavenly!



Yum!!  You can leave the whipped cream off
and eat it for breakfast too!

"Healthy" Blueberry Coffeecake! - Low Sugar


I have so enjoyed experimenting this summer with fruits of the season and blueberries have been at the top of my list.  I needed a break from the muffin madness that has taken over my kitchen so decided to give this already healthy coffee cake recipe a try.  I substituted greek yogurt for sour cream and used sugar baking blends to make it even lower in sugar. I am really pleased with how it came out.  It is flavorful, soft, very moist and just plain delicious.... and it made my kitchen smell wonderful.

Now the one thing in question is why would I want to bake when the humidity is up and it's supposed to be 90 degrees today??  Well the answer is simple - why not?? I started relatively early so the heat inside would dissipate before the heat outside took over!  It's crazy but I don't claim to always make sense!  I have learned that during the summer I need to keep my baking to early in the day or late in the evening - anything else truly IS crazy!!

I hope you will try this and be as delighted with the results as I was.  I love the creations of Marlene Koch and have never had one of her recipes fail, even when I shift the ingredients a bit!

BLUE RIBBON YOGURT COFFEE CAKE

Ingredients for the Cake:

3/4 cup plain Greek yogurt
1/4 c. applesauce
2 Tbsp. sugar
1  egg
1 egg white
1/4 c. Truvia baking blend
1 1/2 c. flour
3/4 tsp. baking soda
1 tsp. baking powder
3 Tbsp. butter
1 cup fresh blueberries


Gently mixed batter...


Ingredients for Crumb Topping:

1/2 c. flour
1 Tbsp. Splenda brown sugar blend
1 Tbsp.  Truvia baking blend
1/4 tsp. cinnamon
2 Tbsp. butter, melted


Cinnamon Crumb Topping


Preheat the oven to 350.  Lightly spray or grease an 8 inch square pan and set aside. (I use EverBake spray from King Arthur Flour - I love it!)

In a medium bowl, combine the yogurt, applesauce, egg, egg white, sugar and Truvia baking blend.  Whisk together.

In a large bowl, mix the flour, baking soda and baking powder.  Add the 3 Tbsp. butter and cut in with a pastry blender or fork until well combined and crumbly.  At this point I like to toss in the blueberries so they will get a light coating of flour and not sink to the bottom when baking.  Then make a well in the center of the bowl and add the yogurt mixture.  Gently mix with a spatula or wooden spoon just until the ingredients are combined. Pour the batter into the prepared baking pan.

Mix the dry topping ingredients together and then add the melted butter and mix with a fork until everything is crumbly.  Sprinkle over the top of the batter.

Bake for 25 minutes or until a toothpick inserted in the center comes out clean.  Cool on a wire rack and wait 10 minutes before cutting (if you can - the temptation is overwhelming!!)

I have been making a LOT of blueberry recipes this summer, and there are undoubtedly more to come, but so far this is my absolute favorite one!


This is one of those times I wish I could share the out of the oven smell.......Mmmmmmm!!

Low Sugar Blueberry Muffins

I am so loving baking this summer with all of the fresh fruit available while trying to make it a little healthier!  I am happily surprised that compromising fat and sugar does not necessarily make for a yucky tasting disaster! In fact, these muffins proved to be some of the most delicious and moist that I have made recently.

I think you will agree when you try them too!!

Simple and readily available ingredients!


They may look a little funny,  but looks are deceiving! These are DELICIOUS!!!

EVERYDAY BLUEBERRY MUFFINS

adapted from Eat  What you Love by Marlene Koch

1 cup nonfat vanilla bean greek yogurt (Trader Joe's) or honey vanilla greek yogurt
1/3 cup orange pineapple juice  (orange is fine - use light for fewer calories and less sugar)
1 large egg
4 Tbsp. butter, melted
1 1/2 tsp. vanilla extract
2 cups all purpose flour
1/4 cup Truvia baking blend (or 1/2 cup Splenda or Truvia)
1 Tbsp. baking powder
1/2 tsp. baking soda
1 cup fresh blueberries

Preheat oven to 425.  Lightly spray a muffin tin (12 cups) with nonstick baking spray and set aside.

In a medium bowl, blend yogurt, juice, egg, melted butter and vanilla extract well. Set aside.

In a large bowl, mix together flour, Truvia baking blend, baking powder and baking soda with a whisk.  Add the blueberries and stir lightly to coat with flour (that will help distribute them through the batter and keep them from all sinking to the bottom!).  Make a well in the center of the dry ingredients and pour in the wet ingredients.  Blend with a large spoon just until the dry ingredients are incorporated and moist.

Spoon the batter into the prepared muffin tin, filling each about 2/3 full.

Bake for 5 min at 425, then reduce the oven temperature to 375 and continue baking about 8-10 minutes.

Cool for 5 minutes before removing to a wire rack to finish cooling.
